To make the Instant Pho in a jar, you'll need:
- Mason jars or salad jars
- Pho rice noodles
- Mushrooms
- Firm or medium-firm
- Cilantro
- Scallions
- Small onion
- Thai red chili peppers
Seasoning:
- Pho seasoning paste (or bouillon cubes)
- Soy sauce
- Spices like star anise, cardamom and cinnamon

Instructions
Cut the tofu into small cubes. Fry them in oil until golden brown on both sides.
Cut the mushrooms into thin slices and fry them in oil until golden and crispy on both sides.

Soak the rice noodles in room-temperature water for a few minutes to soften them (but do not cook them).
In each mason jar or glass salad jar, place the dry rice noodles at the bottom. Divide the seasoning, soy sauce and spices equally between the jars. Layer the fried tofu, mushrooms, vegan ham, cilantro, scallions, onion slices and chili peppers.
Close the jars tightly and refrigerate for up to 3 days.
