- Kimchi: The tangy and spicy flavors of kimchi add a vibrant and robust taste to the dish. Make sure to use a vegan kimchi brand.
- Frozen peas, carrots, and corn: These frozen vegetables provide a convenient way to add color, texture, and a burst of freshness to the fried rice.
- Scallions (white and green parts): The white part adds a mild onion flavor as a base. Meanwhile, the green part adds a fresh and slightly peppery taste, enhancing the overall taste profile of the dish.
- Enoki mushrooms: Enoki mushrooms have a delicate and slightly crunchy texture that complements the dish well. It also adds a subtle earthy flavor.
- Soy sauce: brings a savory umami taste to the dish. This helps enhance the overall depth of flavors and prove a touch of saltiness.
- Gochujang: Gochujang, a Korean chili paste, adds a spicy kick and a rich, complex flavor to the dish.
- Sesame oil: Just a small amount of sesame oil adds a nutty and aromatic note, enhancing the overall flavor.
Optional ingredients for garnish:
- Sesame seeds: Sesame seeds add a pleasant crunch and a hint of nuttiness to the fried rice.
- Nori strips: Nori strips, typically used in sushi, provide a subtle oceanic flavor and a touch of umami.
Instructions
Heat oil in a pan and sautΓ© the white part of the scallions with kimchi and gochujang for 1 minute.

- Increase spiciness: Add more gochujang or red pepper flakes for a spicier kick.
- More vegetables: Consider adding diced bell peppers, shredded cabbage, or sliced zucchini.
- Gluten-free option: Use tamari or coconut aminos instead of soy sauce for a gluten-free version.

Delicious! just made this for dinner using leftover jade pearl rice and veggies on hand. almost used gochugaru powder, but found a pouch of Kisoondo Gochujang, so good and either could work. This is the best fried rice I've made, my new favorite recipe. I'll definitely make this again; my daughter loved it so much she wants more this weekend!
