Ingredients

1 tbsp neutral cooking oil

2 cups of day-old rice

1 cup of chopped kimchi *

Frozen peas, carrots, and corn

3 scallions (white and green parts separated)

150g of enoki mushrooms

1 tbsp of soy sauce

1 tbsp of gochujang
-
1 tbsp of sesame oil
Garnish (optional):

Sesame seeds
-
Nori strips
Instructions

Heat oil in a pan and sautΓ© the white part of the scallions with kimchi and gochujang for 1 minute.

Add cooked rice, enoki mushrooms, and frozen vegetables to the pan. Cook for 5 minutes.

Season with soy sauce and sesame oil.

Garnish with the green part of the scallions, black sesame seeds, and nori strips.
Notes
* Make sure to use a vegan/vegetarian brand of kimchi, as the authentic version contains fish sauce and/or shrimp paste.
