Description

Vegan Kimchi Fried Rice is easy to make with just 8 ingredients and ready in 15 minutes. A flavorful fusion that will delight your taste buds. 🌱🍚


Ingredients

  • 1 tbsp neutral cooking oil

  • 2 cups of day-old rice

  • 1 cup of chopped kimchi *

  • Frozen peas, carrots, and corn

  • 3 scallions (white and green parts separated)

  • 150g of enoki mushrooms

  • 1 tbsp of soy sauce

  • 1 tbsp of gochujang

  • 1 tbsp of sesame oil

Garnish (optional):

  • Sesame seeds

  • Nori strips


Instructions

  1. Heat oil in a pan and sautΓ© the white part of the scallions with kimchi and gochujang for 1 minute.

  2. Add cooked rice, enoki mushrooms, and frozen vegetables to the pan. Cook for 5 minutes.

  3. Season with soy sauce and sesame oil.

  4. Garnish with the green part of the scallions, black sesame seeds, and nori strips.

Notes

* Make sure to use a vegan/vegetarian brand of kimchi, as the authentic version contains fish sauce and/or shrimp paste.
