Description

Vegan Kimchi Ramen is a delicious, hearty and flavorful plant-based dish. This dish is not only quick to prepare, taking just 20 minutes, but it is also a one-pot recipe packed with nutrition and deliciousness.


Ingredients

  • 1 tbsp sesame oil
  • 2 scallions, white and green parts separated and sliced
  • 1 two-inch piece of ginger, sliced
  • 1/2 cup kimchi
  • 2 cups water
  • 1 pack of ramen noodles
  • 2 types of mushrooms (e.g., Shimeji and Enoki)
  • 200g silken tofu
  • 1 tbsp soy sauce or tamari (to taste)
  • 1 tsp red pepper flakes (optional, for added spice)

Instructions

  1. Prepare the ingredients: Slice the green and white parts of the scallions. Slice the ginger. Slice the mushroom and cut off the roots. Cut the silken tofu into cubes.
  2. In a pot, heat sesame oil and stir-fry the white part of the scallion and ginger for 1-2 minutes.
  3. Add the kimchi and continue frying for an additional minute.
  4. Stir in soy sauce and red pepper flakes, then pour in water.
  5. Once the water boils, add the mushrooms and ramen noodles. Cook for 4 minutes.
  6. Add in the silken tofu and garnish with the green part of the scallions.
  7. Serve your flavorful kimchi ramen in a bowl. Enjoy!
