Description

Easy, no-cook Peanut Sauce Cold Tofu dish that only takes 5 minutes to make! For hot summer days when you don't have energy to cook.


Ingredients

Units Scale
  • 400 g silken tofu
  • 1/4 cucumber
  • coriander

Peanut Butter Sauce

  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 4 tbsp warm water
  • 1 tbsp sriracha
  • 1 tbsp rice vinegar
  • 2 tsp sugar
  • 1 clove garlic (finely minced)
  • 1 thumb-sized piece of ginger (finely minced)

Instructions

  1. Serve the silken tofu straight from the package. Pat dry with a paper towel to remove excess moisture.
  2. Finely mince the garlic and ginger. In a bowl, combine the sauce ingredients to make the peanut butter sauce.
  3. Pour the sauce over the tofu.
  4. Thinly slice the cucumber and coriander. Top the cold tofu with the cucumber, coriander, and sesame seeds.
  5. Enjoy with a warm bowl of rice or as a snack!
