Description

These Cinnamon Roll Overnight Oats are the best way to have breakfast in the morning. They present the classic cinnamon rolls in the form of easy and quick-to-make overnight oats!


Ingredients

Units Scale
  • 1 cup oats
  • 1 tbsp brown sugar
  • 2 tbsp vanilla protein powder
  • 2 tbsp chia seeds
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 cup plant milk (I used soy)
  • 1/4 cup coconut yogurt

Toppings:

  • Peanut or almond butter
  • 1/2 tsp ground cinnamon

Coconut swirl:

  • 2 tbsp coconut yogurt
  • 1 tbsp maple syrup
  • 1 tbsp lemon or lime juice

Instructions

  1. Combine oats, brown sugar, vanilla protein powder, chia seeds, cinnamon powder, vanilla extract, plant milk, and 1/4 cup coconut yogurt in a mixing bowl. Stir well to combine all ingredients.
  2. Portion the mixture into individual jars or containers for overnight refrigeration.
  3. For the coconut swirl, mix together 2 tbsp coconut yogurt, 1 tbsp maple syrup, and 1 tbsp lemon or lime juice in a small bowl. Set aside.
  4. Cover the jars and place them in the refrigerator overnight or for at least 4 hours to allow the oats to soak and thicken.
  5. In the morning, give the oats a good stir. If the mixture is too thick, you can add a splash of plant milk to reach your desired consistency.
  6. Top each serving with a dollop of peanut or almond butter and cinnamon mix and a drizzle of the prepared coconut swirl.
