Description

A take on the viral TikTok green goddess salad, can be made in 20 minutes. Incorporating some Japanese elements like miso paste, edamame beans and nori sheet helps elevate the dish and makes it a filling and nourishing meal!


Ingredients

Units Scale
  • 1/2 small cabbage
  • 1/2 English cucumber
  • 4 stalks green onions
  • 100 g edamame
  • nori sheet

Dressing

  • 1 shallot
  • 2 cloves garlic
  • 15 g coriander
  • 50 g spinach
  • 1 lime
  • 1/2 tbsp sugar or agave/maple syrup
  • 2 tbsp nutritional yeast
  • 1 small avocado
  • 1 tsp white miso paste
  • 2 tbsp rice vinegar
  • 1-2 tbsp olive oil
  • 1 tbsp soy sauce

Instructions

  1. Thinly slice the cabbage, cucumber and green onions. Add them to a bowl.
  2. (If use frozen edamame) Add hot boiling water to frozen edamame in a bowl for 10 minutes. Drain the water and add to the salad bowl.
  3. Add all the dressing ingredients to a blender, blend until smooth and adjust to taste. Pour the dressing into the salad bowl and mix well.
  4. Cut the nori sheet into smaller pieces to accompany the salad. Sprinkle sesame seeds and enjoy!

Notes

This recipe can keep for up to 4 days in the fridge, but tastes better when you eat it right away.
