Description

This Spicy Peanut Noodles recipe is a satisfying dish featuring bold flavors: peanut sauce with a kick of heat and crunchy cucumbers. 


Ingredients

  • 200g noodles
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha
  • 2 teaspoons sugar
  • 2 tablespoons lime juice
  • 2 tsp minced garlic
  • 4-6 tbsp cooking water from the noodles

Optional toppings:

  • Chopped scallions
  • Cucumber slices
  • Sesame seeds

Instructions

  1. Begin by cooking the noodles according to the package instructions.

  2. While the noodles are boiling, prepare the peanut sauce by whisking together the peanut butter, soy sauce, sesame oil, sriracha, sugar, lime juice, and minced garlic until smooth. Add the cooking water from the noodles to help mixing.

  3. Once the noodles are cooked, drain them and return them to the pot. Pour the peanut sauce over the noodles and toss until they are evenly coated. The creamy peanut sauce with a hint of spice will cling to every strand, creating a mouthwatering combination.

  4. Serve the Spicy Peanut Noodles in plates or bowls, and if desired, garnish with chopped scallions, cucumber slices, and a sprinkle of sesame seeds. The toppings add freshness and crunch to complement the flavors of the dish.
