Oatmeal:
- 90g rolled oats
- 2 tbsp chia seeds/flaxseeds
- 250ml soy milk
- 250ml espresso (or instant black coffee)
- 1 tbsp maple syrup (or other sweetener of choice)
Tiramisu Cream:
- 200g silken tofu
- 1 tbsp maple syrup (or other sweetener of choice)
- Juice from 1/2 a lime
- 1/4 tsp salt
- 1-2 tsp cacao powder (for dusting)
Instructions
Prep:
- Combine rolled oats, in a container or mason jar. Give the oats a good stir. If the mixture is too thick, you can add a little more milk to reach your desired consistency.
- To make the tiramisu cream, combine the silken tofu, maple syrup, lime and salt in a blender and blend until smooth. Add to another container.
- Transfer the oats and tiramisu cream containers to the fridge and let sit for at least 4 hours before serving.
Serve:
- When ready to serve: Add the tiramisu cream on top of the oatmeal.
- Garnish with cacao powder.
Notes
The recipe lasts for up to 3 days in the fridge.
If you don't have silken tofu, you can use vegan coconut yogurt to make the cream.
