- 2 mason jars or glass salad jars
- 200g Pho rice noodles
- 2 tbsp cooking oil (for frying)
Seasonings:
- 1 cube pho seasoning paste (or 1 vegetable bouillon cube)
- 2 tbsp soy sauce
- Pho spices (2 cinnamon sticks, 2 star anise, 2 cardamom)
Toppings:
- 200g tofu
- 200g king oyster mushrooms (sub with other mushrooms of choice)
- A few slices of vegan ham (optional)
- 25g cilantro
- 3 scallions (thinly sliced)
- 1 small onion (thinly sliced)
- 2 Thai bird-eye chili peppers
Instructions
- Cut the tofu into small cubes. Fry them in oil until golden brown on both sides.
- Cut the mushrooms into thin slices and fry them in oil until golden and crispy on both sides.
- Soak the rice noodles in room-temperature water for a few minutes to soften them (but do not cook them).
- In each mason jar or glass salad jar, place the dry rice noodles at the bottom. Divide the seasoning, soy sauce and spices equally between the jars. Layer the fried tofu, mushrooms, cilantro, scallions, onion slices and chili peppers.
- Close the jars tightly and refrigerate for up to 3 days.
- When ready to eat, pour hot water over the mason jar or into a bowl with the toppings. Cover and let it sit for 5 minutes to allow the flavors to meld together.
- After 5 minutes, give the contents a good stir and enjoy your delicious Pho!
