Description
This vegan Mapo Tofu Udon is a TikTok noodle trend made creamy with silken tofu. Spicy, savory, comforting, and ready in under 20 minutes.
Ingredients
Silken Tofu Sauce
- 1 pack silken tofu (200 g)
- Salt and black pepper, to taste
Mapo Tofu Udon
- 200 g firm tofu, crumbled
- 2 green onions, whites and greens separated
- 2 cloves garlic, minced
- 1 thumb-size piece of ginger, minced
- 1 tbsp doubanjiang (spicy fermented bean paste)
- 1 tbsp soy sauce
- 1 tsp vegetarian oyster sauce
- 2 packs udon noodles
Instructions

Make the silken tofu sauce: Add the silken tofu, salt, and black pepper to a blender. Blend until completely smooth and creamy. Set aside.

Cook the udon noodles: Bring a pot of water to a boil and cook the udon according to package instructions. Drain and set aside.
The Mapo Tofu:

Finely mince the garlic and ginger. Separate the white and green parts of the green onions.

Heat a pan over medium heat with a little oil. Add in the crumbled tofu and fry until a bit dry out. Add in the green onion whites, garlic, and ginger. Sauté until fragrant.

Add the doubanjiang and cook for 30–60 seconds, stirring constantly to release its aroma. Stir in the soy sauce and vegetarian oyster sauce.

Cook for a few minutes, allowing it to absorb the sauce and lightly dry out, similar to classic Mapo tofu.

In a bowl, combine the cooked udon, green onion greens, blended silken tofu sauce and the stir-fried tofu. Enjoy!
