Ingredients

Protein:

  • 400g chickpeas from a can (rinsed and drained)

Sauce Base:

  • 200g silken tofu
  • 100g cashews

Aromatics:

  • 1/2 an onion (diced)
  • 2 cloves of garlic (finely minced)

Herbs & Spices:

  • 1 tsp oregano
  • 1 tsp red pepper flakes
  • 2 tsp smoked paprika
  • 1/2 tsp salt
  • 1 tbsp soy sauce
  • 2 tbsp nutritional yeast
  • Juice from 1/2 a lime

Others:

  • 1/2 cup water
  • 1/3 cup sundried tomato (chopped)
  • Chopped parsley

Instructions

Prep:

  1. Blend cashews and silken tofu with water to create a vegan cream.

Cook:

  1. Sauté diced onion and minced garlic in heated oil. Stir in spices (oregano, red pepper flakes, smoked paprika, and a pinch of salt) then add the vegan cream.
  2. Incorporate chopped sundried tomatoes and chickpeas into the cream, add water as needed, and season with soy sauce. Simmer for 5 minutes.
  3. Add nutritional yeast and lime juice then give it a final stir.
  4. Garnish with fresh parsley before serving.
