Description

Carrot and Red Lentil Soup is a hearty and nutritious dish that combines the natural sweetness of carrots with the earthy flavors of red lentils.


Ingredients

Units Scale
  • 1 Onion
  • 2 Medium carrot
  • 1 tbsp cooking oil
  • 1 cup Dried red lentils (rinsed and drained)
  • 3 1/2 cup Vegetable stock
  • 1 tsp Red pepper flakes
  • 1 tsp Chili powder
  • 1 tsp Salt and pepper

Serve with:

  • Sourdough bread

Instructions

  1. Cut the onion and carrots into small pieces.
  2. Heat some oil in a pot and add the chopped vegetables.
  3. Sauté briefly and then add the red lentils to the pot.
  4. Deglaze everything with the vegetable stock and leave to cook until the lentils have absorbed the water and are nice and soft (about 25 minutes). Add the spices and top with optional parsley or cilantro.

Notes

A few slices of bread to make a more filling meal.
