Vegan Mascarpone Cream:

  1. In a food processor, combine the soft tofu, coconut cream, melted vegan butter, caster sugar, and vanilla extract.

Pistachio Butter:

  2. Add the pistachio butter to the vegan mascarpone cream and use a hand mixer to mix the cream until it becomes fluffy (about 5 minutes).

  1. Brew 2 shots of espresso or prepare ½ cup of strong coffee.

Assembly:

  • 90 grams vegan butter, melted
  • 90 grams caster sugar (can substitute granulated organic cane sugar)
  • 1 teaspoon vanilla extract

Pistachio Butter

  • ½ cup (75g) pistachios, shelled
  • 1 tsp melted coconut oil
  • Sea salt

Espresso Syrup.

  • 2 shots espresso (can substitute ½ cup strong coffee)

Garnish:

  • 25g pistachio, crushed
