These Mushroom Fritters draw inspiration from the Vietnamese fish cakes of my childhood. Traditionally made with fish, flour, and dill, my vegan twist features oyster mushrooms. Serve them with my savory sweet dipping sauce!

With a delightful texture—crispy exterior and tender interior—they burst with earthy mushroom notes, fragrant dill, and a subtle kick of spice. Whether enjoyed as an appetizer, snack or side dish, these fritters promise a flavorful addition to any dinner table!

Ingredients

This recipe features only 5 ingredients:

  • Oyster mushrooms: Oyster mushrooms are chosen for their meaty texture and subtle umami flavor.

  • Dill: adds a burst of herbaceous brightness to the fritters.

  • Chili pepper: introduces a subtle heat that elevates the dish and adds a touch of spice.

  • Flour: Flour acts as a binding agent in the fritters, helping to hold the ingredients together and contribute to the desired crispy texture when fried.

  • Corn starch: Corn starch is added to the mixture to enhance the crispiness of the fritters when fried.

Instructions

Clean the oyster mushrooms thoroughly with a paper towel and shred them.

Finely chop the dill and chili pepper.

Chop the chili pepper.

In a bowl, mix the chopped mushrooms, dill, chili pepper, corn starch, flour, salt, and pepper until well combined. Add more water if needed to help the mixture stick better.

Shape the mixture into small patties.

Form the mixture into patties.

Shallow the fritters in oil

Heat oil in a pan over medium heat.

Fry the patties until golden brown on both sides.

Remove from the pan and place on a paper towel to absorb excess oil.

Serve hot with your favorite dipping sauce or side dish.

Flip the fritters when the other side has turned golden

Ingredients

  • 200g oyster mushrooms
  • 20g dill
  • 1 chili pepper
  • 30g corn starch
  • 50g flour
  • Salt and pepper
  • Oil for frying

Dipping sauce:

  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • Sesame seeds
  • 1 tsp red pepper flakes

Instructions

  1. Clean the oyster mushrooms thoroughly and shred them.
  2. Finely chop the dill and chili pepper.

  3. In a bowl, mix the chopped mushrooms, dill, chili pepper, corn starch, flour, salt, and pepper until well combined. Add more water if needed to help the mixture stick better.

  4. Shape the mixture into small patties.

  5. Heat oil in a pan over medium heat.

  6. Fry the patties until golden brown on both sides.
