Ingredients

This recipe requires only 5 ingredients:

Ingredients of the Rice Bread
  • Rice: Forms the gluten-free base texture of the bread when blended.
  • Salt: Enhances flavor, regulates fermentation, and strengthens the gluten structure.
  • Sugar: Feeds yeast for rise and flavor development.
  • Oil: Adds moisture for a soft, tender texture in gluten-free bread.
  • Dry active yeast: Leavening agent that interacts with sugar to create a light, airy texture.

Instructions

Wash rice and soak in water for at least 2 hours, preferably overnight for the best results.

Drain the soaked rice well to ensure excess water is removed. Proper draining is crucial to prevent the bread from collapsing or shrinking.

In a blender, combine the soaked rice, sugar, salt, and water. Blend for 1 minute until a smooth mixture forms.

Add the oil to the blender and blend for another minute.

Incorporate the dry active yeast into the mixture and blend for an additional minute.

Soak the rice for at least 2 hours
Blend the ingredients

Pour the batter into a parchment-lined mold, then spray water on the surface.

Allow the batter to rest in a warm place for about 30 minutes, or until it has almost doubled in volume.

Add to a parchment-line baking dish
Cover and rest

Preheat the oven to 180°C (360°F) and bake the bread for 35 minutes.

Once baked, remove the bread from the oven and let it cool on a wire rack until it reaches room temperature.

Slice the bread and serve it fresh!

Bake until golden brown on top
Cut into slices and enjoy!!

Storage Instructions

To store this Rice Bread, allow it to cool completely after baking. Once cooled, wrap the bread tightly in plastic wrap or place it in an airtight container to maintain freshness. Store the bread at room temperature for up to 2-3 days.

For longer storage, you can freeze individual slices or the entire loaf. Simply wrap the bread in plastic wrap and then aluminum foil before placing it in the freezer. When ready to enjoy, thaw the bread at room temperature or reheat it in the oven for a freshly baked taste.

    HI, with the concerns for arsenic in rice, there are directions to parboil rice to remove arsenic before cooking. See: “Scientists found that when rice is thoroughly rinsed and then cooked in an excessive amount of water using the PBA (parboiled and absorbed) method, it removes 54% and 73% of inorganic arsenic for brown and white rice respectively.? The method is to boil 4 to 6 cups water for every 1 cup of rice, add the rinsed soaked rice to the pan, and boil for 5 minutes, then remove and drain the rice and rinse again. This removes much of the arsenic. Question: Do you think or would you want to try and parboil the rice first, before putting in the blender? This could remove arsenic, but I do not know if the recipe would work with parboild rice? Help? I am trying to reduce arsenic on gluten free diet!
