- 1 cup melted dark chocolate (I use 75%)
- 1 tablespoon coconut oil (optional)
- ¼ cup maple syrup
Instructions
- Drain the silken tofu and pat it dry gently with paper towels to remove excess moisture.
- Melt the dark chocolate with the optional coconut oil in a heatproof bowl set over a pot of simmering water until smooth. Alternatively, you can melt the chocolate in the microwave, stirring every 30 seconds until fully melted.
- In a food processor or blender, combine the silken tofu, melted chocolate, and maple syrup. Blend until the mixture is creamy and well combined.
- Divide the chocolate mousse into serving cups or bowls. Cover them with plastic wrap and refrigerate for 1-2 hours, or until set.
- Garnish with fresh berries, a sprinkle of coconut flakes, nuts or a dollop of whipped coconut cream before serving.
