Ingredients

  • 1 package (12-14 oz) silken tofu
  • 1 cup melted dark chocolate (I use 75%)
  • 1 tablespoon coconut oil (optional)
  • ¼ cup maple syrup

Instructions

  1. Drain the silken tofu and pat it dry gently with paper towels to remove excess moisture.
  2. Melt the dark chocolate with the optional coconut oil in a heatproof bowl set over a pot of simmering water until smooth. Alternatively, you can melt the chocolate in the microwave, stirring every 30 seconds until fully melted.
  3. In a food processor or blender, combine the silken tofu, melted chocolate, and maple syrup. Blend until the mixture is creamy and well combined.
  4. Divide the chocolate mousse into serving cups or bowls. Cover them with plastic wrap and refrigerate for 1-2 hours, or until set.
  5. Garnish with fresh berries, a sprinkle of coconut flakes, nuts or a dollop of whipped coconut cream before serving.

Variations and Substitutions

  • Silken Tofu: If you prefer a nuttier flavor, you can substitute silken tofu with an equal amount of creamy almond or cashew butter.
  • Dark Chocolate: For a sweet flavor profile, opt for semi-sweet chocolate or dairy-free chocolate chips.
  • Maple Syrup: Agave nectar, sugar or date syrup can be used as alternatives to maple syrup.
