Vegan Banh Mi with Spicy Tofu

What Is Banh Mi?

Banh Mi is a Vietnamese sandwich, and the name simply means “bread” in Vietnamese. It starts with a light, crackly baguette, a legacy of French colonial influence in Vietnam. Vietnamese bakers made the bread their own by using part rice flour, which gives it a thin, crisp crust and an airy, fluffy inside.

What makes banh mi special is the balance. Each bite is rich, tangy, salty, sweet, spicy, and fresh at once. A traditional banh mi usually includes:

  • Pâté and mayonnaise for richness
  • Grilled or roasted meat, or cold cuts, for the savory filling
  • Pickled carrot and daikon (do chua) for tang and crunch
  • Fresh cucumber and cilantro for a cool, herby contrast
  • Chili peppers for heat

This vegan version keeps all of that structure. The spicy tofu replaces the meat, and homemade vegan pâté brings back the rich, savory spread that makes a banh mi taste like a banh mi.

Ingredients for Vegan Banh Mi

This recipe makes 4 sandwiches. The full ingredient list with exact amounts is in the recipe card below, and here’s what each part does.

Spicy tofu
The star of the sandwich. Pre-fried tofu has a firm, chewy texture that soaks up marinade well, so it doesn’t fall apart in the pan. The marinade combines soy sauce, sugar, sesame oil, chili sauce, and black pepper, which gives the tofu a sticky, caramelized, savory-sweet finish with a kick. Use sriracha or sambal oelek, depending on how much heat you like.

Spicy Tofu

Quick pickled carrot and daikon
These tangy, crunchy pickles cut through the richness of the pâté and tofu. The brine is just rice vinegar, sugar, salt, and hot water, and they’re ready in 15-20 minutes. Julienne the carrot and daikon thinly so they pack neatly into the sandwich.

Vegan pâté
This is what makes the sandwich feel authentic. Spread it on both sides of the baguette for a creamy, savory base. Here’s my vegan pâté recipe. You can make it up to 4 days ahead, which makes assembly quick.

Fresh cucumber
Cucumber stays fresh, not pickled, to add a cool, juicy crunch against the spicy tofu. Slice it into thin spears so it sits flat in the baguette.

Cilantro and chili peppers
Cilantro adds a bright, herby freshness that is essential to banh mi. Sliced fresh chili peppers are optional, but they’re great for anyone who wants extra heat.

Banh mi baguettes
Look for small, light baguettes with a thin crispy crust and a soft, airy inside. Vietnamese bakeries and Asian supermarkets often sell them, but any small crusty baguette works. Toast them briefly if you want extra crunch.

Description

Crispy spicy tofu, creamy vegan pâté, tangy pickles, and fresh cilantro in a crusty baguette. This Vegan Banh Mi has all the classic flavors, no animal products needed.


Ingredients

Units Scale

Spicy Tofu

  • 200g pre-fried tofu
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp sesame oil
  • 1 tbsp chili sauce (sriracha or sambal oelek)
  • ½ tsp black pepper
  • 1 tbsp water
  • 1 tbsp neutral oil, for pan-frying

Quick Pickled Carrot & Daikon

  • 1 carrot, julienned
  • 100g daikon (about 1 small piece), julienned
  • ¼ cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • ½ cup hot water

For Assembly

 

  • 4 banh mi baguettes (or small crusty baguettes)
  • Vegan pâté
  • 1 cucumber, cut into thin spears or slices (fresh, not pickled)
  • Fresh cilantro
  • Fresh chili peppers, sliced (optional)
  • Extra chili sauce (optional)

Instructions

Marinate the tofu

  1. Cut the pre-fried tofu into thin slices or strips.
  2. In a bowl, mix the soy sauce, sugar, sesame oil, chili sauce, black pepper, and water.
  3. Add the tofu and gently toss to coat. Let it marinate for 15-20 minutes while you make the pickles.

Make the pickled carrot & daikon

  1. In a bowl, stir together the rice vinegar, sugar, salt, and hot water until the sugar and salt dissolve.
  2. Add the julienned carrot and daikon. Let them sit for at least 15-20 minutes, then drain before using.

Cook the tofu

  1. Heat the oil in a pan over medium heat.
  2. Add the marinated tofu in a single layer and pan-fry for 3-4 minutes per side, until golden and caramelized.
  3. Pour in any remaining marinade and simmer for 1-2 minutes, until the tofu absorbs the sauce. Remove from the heat.

Prep the fresh toppings

  1. Slice the cucumber into thin spears or slices.
  2. Pick the cilantro leaves and slice the chili peppers, if using.

Assemble the banh mi

  1. Slice each baguette in half lengthwise. Toast it briefly if you like extra crunch.
  2. Spread vegan pâté generously on both sides.
  3. Layer in the spicy tofu, then the drained pickled carrot and daikon, fresh cucumber, and cilantro.
  4. Top with sliced chili peppers or a drizzle of chili sauce for extra heat.

Serve and enjoy while the bread is fresh and crunchy!

Notes

  • Make ahead: The pickles keep in the fridge for up to 1 week. The tofu keeps for 3 days, and you can reheat it in a pan.
  • Crispier tofu: Pat the marinated tofu lightly with a paper towel before frying, and don’t overcrowd the pan.
  • Storage: Assemble just before serving so the bread doesn’t get soggy.
