Roasted Carrots with Tofu Spread
As the holiday season is coming upon us, I am sharing some of my favorite plant-based holiday-inspired recipes that you can serve at your Christmas table this year.
Carrots can seem like a humble ingredient, yet when done with a creative twist, can elevate to a whole new level. In this recipe, we take carrots, seasoned with olive oil, salt and pepper and roast them until perfection, and combine them with a luscious tofu spread. The roasted carrots have a melt-in-your-mouth satisfying texture while the tofu spread adds a velvety dimension to every bite.
This recipe makes an excellent side dish for your holiday table, together with my Teriyaki Baked Tofu, Roasted Cauliflower with Gochujang Tahini and Miso Chocolate Chip Cookies.
Ingredients
- 8 Carrot (marinated with salt, pepper and spices that you like)
- 1 tablespoon olive oil
Tofu Spread:
- 200g Soft tofu
- 1 tablespoon Tahini
- ½ teaspoon Lemon juice
- 1 teaspoon Salt
- ¼ teaspoon Black pepper
- 1 teaspoon Agave
- Cress for topping
Instructions
Wash the carrots and place them in a baking dish.
Marinate the carrots with olive oil, salt and pepper.
Then bake them in the oven at 200°C (400°F) for approx. 20 minutes.
Meanwhile, prepare the tofu spread. Place all the ingredients (soft tofu, tahini, lemon juice, salt, agave syrup) in a blender and blend until smooth.
Spread the tofu spread on the plate to be prepared, place the cooked carrots on top, and top everything with some cress.
