On busy weeknights, I love to make something comforting and quick to serve with rice! This Bok Choy & Mushroom Stir Fry makes a fresh, vibrant and well-balanced side dish to complement any savory dishes. It also goes well on rice. I love to serve this as a side dish to accompany Vietnamese Tofu with Tomato Sauce.

Ingredients
This recipe requires the following ingredients:
- Bok choy: I love using bok choy for this recipe because of its crunchiness and subtle flavor. But feel free to use other dark leafy vegetables like spinach or choi sum.
- Mushroom: I use white cremini mushrooms, but you can use any mushroom of choice.
- Garlic: contributes a pungent and slightly sweet flavor that complements the earthy mushrooms and the mild flavors of the bok choy.
- Seasoning: I use salt and soy sauce for the savory, umami flavors.
Instructions
- Wash and cut the bok choy in halves. Thinly slice the mushroom.
- Fry the minced garlic in 1 tablespoon of oil for a few minutes. Then add in the mushrooms
- Stir fry the mushroom until soft and lightly golden, about 2 minutes. Then add in the bok choy and stir fry for a few more minutes until slightly wilted but still crunchy.
- Add in the soy sauce, salt and mix until well combined.
- Sprinkle with sesame seeds.

- 1 lb. bok choy
- 1 cup cremini mushrooms
- 4 cloves of garlic, finely minced
- 1 tbsp oil
- 1 tbsp soy sauce
- Pinch of salt
- Sesame seeds (optional, for garnish)
Instructions
- Wash and cut the bok choy in halves. Thinly slice the mushroom.
- Fry the minced garlic in 1 tablespoon of oil for a few minutes. Then add in the mushrooms
- Stir fry the mushroom until soft and lightly golden, about 2 minutes. Then add in the bok choy and stir fry for a few more minutes until slightly wilted but still crunchy.
- Add in the soy sauce, salt and mix until well combined.
- Sprinkle with the optional sesame seeds.
